The company brings traceable,\u00a0sustainable seafood to guests across the country.\u00a0 They work directly\u00a0with fishermen to hand pick the best seafood, and serve that straight\u00a0from the source, prepared pure and simple, without the filler. After attending\u00a0Georgetown University and beginning an investment banking career on\u00a0Wall Street, Luke was remiss to find that every lobster roll available\u00a0in New York was overpriced, drowning in mayo, and diluted with celery.\u00a0He craved a real Maine-style roll and simply couldn\u2019t find one.<br \/>\n<span style=\"color: #ffffff;\">.<\/span><br \/>\nIn the 10 years since launching, Holden and his partners have worked\u00a0to vertically integrate the business to insure the highest quality\u00a0products with guaranteed integrity and provenance. Growing up in the\u00a0industry has afforded Holden a high level of clout with with the\u00a0lobsterman, harvesters and fishermen in Tenants Harbor Maine who source his product.\u00a0 We learn that the experience and\u00a0support that Luke&#8217;s father offered from running Maine&#8217;s largest\u00a0lobster processing facility gave their team at Luke&#8217;s Lobsters the\u00a0insight and knowhow to launch a processing facility in Saco. \u00a0This infrastructure \u00a0has\u00a0since expedited growth to now service 30 domestic, and 11\u00a0international Shacks, \u00a0as well as their wholesale account Whole\u00a0Foods.<br \/>\n<span style=\"color: #ffffff;\">.<\/span><br \/>\nIn our 40 minute discussion we learn more about what this\u00a0thought-leader is doing to protect his fishery in the warming waters\u00a0of the Gulf of Maine.\u00a0 We chat about full carcass utilization of the\u00a0lobster, and about the economic viability of the fishery and its\u00a0future crop.
